Creamy Chicken Enchilada Casserole – CF, GF, DF
An allergy-friendly creamy Tex-Mex casserole and a use up for chip crumbs!
I have to give kudos to Leanne Vogel for the “cheesy sauce” recipe. I had been working through a couple of challenges that both came together in this one recipe. I have a family favorite chicken casserole recipe that calls for layering corn tortillas in a monterey jack and sour cream sauce. That recipe causes problems for me with both the corn tortillas and the cheesy sauce. 🙁

Mustard Gravy – GF,DF,CF,EF
Gravy is a very simple thing to make—even gluten-free gravy. It’s the subtle variations that each cook adds that makes it her own. My gravy acquired its signature twist last Thanksgiving.

Tikka Makhani (Butter chicken) – GF,NSF,CF,EF
What’s the difference between Chicken Tikka Masala and Tikka Makhani (Butter Chicken)?
When researching the recipe for this dish, I found that the recipes are often interchangeable. I dug deeper and found that masala is spicier and uses white meat and makhani includes butter and dark meat. Mmmm. Give me the dark meat any day!
