Top 8 Allergens Doesn’t Even Begin to Cut It

corn free everyday iconWhen the food industry tries to label food allergens, it’s usually only the top eight. This doesn’t cover corn. It also doesn’t cover celery or citrus or cilantro and many other foods that don’t begin with the letter “C”. And yes, I do know people who have severe food allergies to each of these foods.

Top 8 allergens according to the Mayo Clinic

  • Milk
  • Eggs
  • Peanuts
  • Tree nuts (such as almonds, cashews, walnuts but not coconut, which is a fruit)
  • Fish (such as bass, cod, flounder)
  • Shellfish (such as crab, lobster, shrimp)
  • Soy
  • Wheat/gluten

Biggest Frustration Dealing with Food Allergies

I think one of the biggest frustration for most allergy sufferers is trying to parse the menus at restaurants to make sure you can eat safely. There are many places I just wont go because the menu is non-existent/out-of-date online or the descriptions are too vague for me to ask informed questions. Don’t even get me started on getting accurate answers to my questions from the wait staff. That’s a rant for another time. I want to be sure before I sit down at a table that there’s something on the menu that I’ll be able to eat.

A close second is to search for a suitable recipe that doesn’t contain any of your allergens. I can’t tell you the number of times I’ve been excited by a gluten-free bread recipe only to find out that it has yeast in it. Yeast is the one thing I haven’t found a viable substitute for in bread recipes.

Increasing Corn Allergy Awareness

I’m so pleased that everyone is enjoying the corn-free link party. One of my long-term goals is to raise awareness of corn allergies until it is recognized as a top allergen and labeling is required. It’s my personal opinion that corn allergies in the United States are very under-diagnosed. It’s in just about everything so it’s hard to eliminate and prove that corn is the cause of the allergy symptoms.

I appreciate all your comments. I’m always so pleased to find out that I’m providing valuable information to you. A couple of people have told me that my spam blockers have given them problems. I’m so sorry that spammers are ruining it for us all. I just don’t have time to fish out the real comments from the spam and hold down a full-time job.
