A juicy baked apple with cinnamon and walnut-laced oatmeal baked inside

Ingredients
  • 1 cup rolled oats
  • 1 cup non-dairy milk (I use homemade almond-brazil nut milk.)
  • 4 large unwaxed organic baking apples (I use granny smith apples.)
  • ¼ chopped walnuts
  • 3 tbsps unsalted butter, cubed (substitute coconut oil for a vegan recipe)
  • ¼ cup coconut sugar
  • 1 tsp cinnamon
  • ¼ tsp sea salt
Instructions
  1. Soak rolled oats in milk in the refrigerator for at least 2 hours or up to overnight.
  2. Preheat oven to 350°F.
  3. Wash apples and scoop out the top and center of the apple. Be careful not to pierce the bottom. A grapefruit spoon would work great here. Wish I had one!
  4. Mix the soaked oats, walnuts, butter, coconut sugar, cinnamon and salt.
  5. Carefully pack the oat mixture into the hollow apples and place in a baking pan. Sprinkle more coconut sugar on the tops if you like.
  6. Bake for 30 minutes.
Notes
If you can't find large apples, smaller apples work just as well if you cut them in half and make "bowls" out of them.

It's very important to use organic and unwaxed apples. Apples are the dirtiest of the dirty dozen and baking waxed apples is just gross. By the way, most wax on produce is made from corn!

If you're sensitive to oats, try cooking ½ cup quinoa in 1 cup milk. Then proceed with the rest of the recipe as normal.
