Spaghetti Squash Primavera – GF,Corn-free,EF,Vegan
A simple and delicious veggie dish that combines the best of italian pasta and roasted vegetable leftovers!
Primavera is the Italian word for Spring. However, this dish screams autumn. Anybody know what the Italian word for Autumn is? Pasta Autumn just doesn’t have the same ring. Yep, I’ll stick with Spaghetti Squash Primavera year round.

Tahdig: Persian Hash Browns – Nightshade-free, GF, CF
I’m so excited to present you with this recipe for Tahdig, or as I think of it, rice hash browns! Yeah, that’s where my mind goes when I see a pan-fried salty starch that goes great with a tomato-based sauce. 🙂

Pre-corn Allergy Origins
Before I was diagnosed with the corn allergy, I used to make cornbread muffins and stuff them with turkey sausage, corn, and cheese. Literally, there was as much stuffing as batter. Yum! They were a great on-the-go breakfast when I was in college. Sadly, I can’t have any of those items anymore. That’s okay because these muffins are even better!

Tip: Cashew Butter Apple for lunch
A granny smith apple sealed with nut butter was a college lunch staple for me. It was quick and easy. Toss it in a baggie and go!
I don’t eat peanuts anymore due a mold allergy but that hasn’t stopped me from enjoying this healthy treat.
