Meatball Stuffed Un-Cornmeal Muffins – Corn-free, Gluten-Free

Before I was diagnosed with the corn allergy, I used to make cornbread muffins and stuff them with turkey sausage, corn, and cheese. Literally, there was as much stuffing as batter. Yum! Tip: Cashew Butter Apple for lunch

A granny smith apple sealed with nut butter was a college lunch staple for me. It was quick and easy. Toss it in a baggie and go!
