A quick and easy meal for any time of day and a great use up for leftovers.
These mini frittatas have saved me many morning when I otherwise wouldn’t have time for breakfast. It’s so easy to heat up a couple and pop them into my purse to eat once I arrive at the office.
A juicy baked apple with cinnamon and walnut-laced oatmeal baked inside—what a wonderful, healthy Fall treat.

Pre-corn Allergy Origins
Before I was diagnosed with the corn allergy, I used to make cornbread muffins and stuff them with turkey sausage, corn, and cheese. Literally, there was as much stuffing as batter. Yum! Sweet potato french toast custard is a great gluten-free breakfast or dessert treat that’s also refined sugar-free and dairy-free. It’s also an easy sell to kids that don’t like eggs. They think they’re getting a treat but you know there’s an egg in each serving. Bonus!
