I was very excited to find out that Americas Test Kitchen (ATK) was publishing a gluten-free book. I’m a big fan of their shows on PBS. Even though I can’t use most of their recipes as is, they give me enough information that I can usually convert the recipe to suit me. read more

Carmel Popcorn Substitute – Corn-free, Gluten-free

Having a corn allergy means you miss out on a lot of popular snacks. Just about all chips are out due to the use of corn oil, maltodextrin, xanthan gum and citric acid. Popcorn is sooooo out. Most of the time even smelling popcorn is out. Which means movie theaters are often out. Sigh. read more

At this point the broth has settled overnight in the refrigerator. You can see three distinct layers—fat, broth, and sediment. You can skim off the fat to use in cooking if you purchased high quality birds. Otherwise discard the fat and the sediment. read more

Bone broth is all about extracting gelatin from the bones. Gelatin breaks down into collagen which is a critical building block for our bodies. I credit bone broth alone with the improvements in my skin and digestion. My chiropractor has also noticed a marked improvement in my ability to be adjusted and to hold an adjustment. read more
