An allergy-friendly creamy Tex-Mex casserole and a use up for chip crumbs!
I have to give kudos to Leanne Vogel for the “cheesy sauce” recipe. I had been working through a couple of challenges that both came together in this one recipe. I have a family favorite chicken casserole recipe that calls for layering corn tortillas in a monterey jack and sour cream sauce. That recipe causes problems for me with both the corn tortillas and the cheesy sauce. 🙁

Mini Frittatas – Corn-free, GF,DF
A quick and easy meal for any time of day and a great use up for leftovers.
These mini frittatas have saved me many morning when I otherwise wouldn’t have time for breakfast. It’s so easy to heat up a couple and pop them into my purse to eat once I arrive at the office.

Quick and Fun Donut Rolls – GF,CF,DF,YF
I was browsing through some gluten-free/paleo bread recipes and I noticed they all had the same issue. The bread stays doughy in the middle and it takes forever to bake. So, I thought, “What if I took out the middle?”…and the donut roll was born!

Creamy Vanilla Custard Ice Cream – Corn-free,GF,RSF
This ice cream is rich and creamy but most importantly scoop-able (and sliceable) right from the freezer.
In order to make the ice cream birthday cake recipe I shared with you yesterday, I needed a softer non-dairy ice cream base. Coconut milk is notoriously hard to scoop!

Lemon Mousse Tart – Corn-free, GF, Refined SF
I loved the lemon star sandwich cookies I made last December so much that I couldn’t stop playing with the recipe. I’ve tweaked the lemon curd recipe into a fluffy cloud of lemon mousse to make this very elegant but easy lemon tart recipe. The addition of whipped coconut cream mellows out the tart lemon curd bite. I like both flavors but in this instance too much tart flavor would ruin this…dessert. ( Ha! Thought I’d go with the obvious pun, didn’t you?)

Small Batch Mayonnaise – 5 Ingredients!
I found that one of the most difficult things to make on my own was mayonnaise. Every recipe I found had raw eggs in it, called for ingredients I can’t have, or just made a ton of it! Then I found a recipe online that called for cooking the mayonnaise.
