Top 8 Allergens Doesn’t Even Begin to Cut It
When the food industry tries to label food allergens, it’s usually only the top eight. This doesn’t cover corn. It also doesn’t cover celery or citrus or cilantro and many other foods that don’t begin with the letter “C”. And yes, I do know people who have severe food allergies to each of these foods.

Creamy Chicken Enchilada Casserole – CF, GF, DF
An allergy-friendly creamy Tex-Mex casserole and a use up for chip crumbs!
I have to give kudos to Leanne Vogel for the “cheesy sauce” recipe. I had been working through a couple of challenges that both came together in this one recipe. I have a family favorite chicken casserole recipe that calls for layering corn tortillas in a monterey jack and sour cream sauce. That recipe causes problems for me with both the corn tortillas and the cheesy sauce. 🙁

Baby It’s Cold Outside!
We’re expecting 3-5 inches of snow tomorrow…in Charlotte, North Carolina! It’s below freezing today and getting colder over the next week. I just want to be toasty warm on my sofa in my big fuzzy socks. How about you?

Since starting the link party, some interesting questions have come up about corn in craft supplies. I didn’t know some of the answers off the top of my head so I began researching. Apparently crayons do have corn in the glue used to hold the wrapper on. Who knew! Basically corn is cheap in this country. So if it saves the manufacturers a few pennies to use corn-derived ingredients, they will go for the corn every time.

A quick and easy meal for any time of day and a great use up for leftovers.
These mini frittatas have saved me many morning when I otherwise wouldn’t have time for breakfast. It’s so easy to heat up a couple and pop them into my purse to eat once I arrive at the office.
