Small Batch Mayonnaise – 5 Ingredients!
I found that one of the most difficult things to make on my own was mayonnaise. Every recipe I found had raw eggs in it, called for ingredients I can’t have, or just made a ton of it! Then I found a recipe online that called for cooking the mayonnaise.

Tomato Onion Jam – Corn-free, Refined sugar-free, GF
This sauce is tangy, slightly sweet and spicy. It’s great on eggs, glazed over baked chicken, and in my turkey burgers.
My only dilemma is what to call it. It’s not spicy enough to be a salsa—at least according to my sister in Texas. It’s not sweet enough, or sticky enough, to be a jam. Chutney—What is a chutney anyway?

Meatball Stuffed Un-Cornmeal Muffins – Corn-free, Gluten-Free
I shared my recipes for caramelized onion turkey burgers and un-cornmeal muffins last week so I could share this recipe today. 🙂
Pre-corn Allergy Origins
Before I was diagnosed with the corn allergy, I used to make cornbread muffins and stuff them with turkey sausage, corn, and cheese. Literally, there was as much stuffing as batter. Yum! They were a great on-the-go breakfast when I was in college. Sadly, I can’t have any of those items anymore. That’s okay because these muffins are even better!

Caramelized Onion Turkey Burger – GF, Corn-free
Turkey burgers are difficult to make as juicy as beef burgers. When America’s Test Kitchen did it, they tried to make a faux hamburger by adding lots of mushrooms and soy sauce.

Corn (-less) Tortillas – Corn-free, Gluten-free, Yeast-free
Because I’m allergic to corn and gluten-free, I had to find a way to satisfy my cravings for corn tortillas and corn chips. This is my favorite use up for leftover nut pulp—almond and brazil nuts. Any nut pulp will work for this recipe.

Recipe: Chicken Bone Broth—Day 3
If you’ve been following along, you’ve now got a refrigerator full of bone broth. What do you do next?
At this point the broth has settled overnight in the refrigerator. You can see three distinct layers—fat, broth, and sediment. You can skim off the fat to use in cooking if you purchased high quality birds. Otherwise discard the fat and the sediment.
